Why does Riesling pair with Pork?

Pork has a natural sweetness that off-dry Riesling plays directly into. The wine's acid cuts through fat. Its stone fruit and floral notes match pork's mild flavor without overwhelming it. Spicy preparations, glazed pork chops, roast loin — Riesling handles all of them because it can lean dry or off-dry depending on the dish.

Don't be afraid of a touch of residual sugar. With pork, that slight sweetness is an asset, not a flaw. It rounds out salt, spice, and char in a way a bone-dry wine can't.
